Artichoke cream is an easy and quick recipe to prepare, even on important occasions. A small whim with the unique and unforgettable flavour that you absolutely must taste.
Step 1
Peel the artichokes, remove the stalks and outer leaves harder, check them and cut them into wedges. As you proceed, soak them in water acidulated with lemon juice.
Step 2
Slice the shallot and let it dry in a saucepan with a drizzle of oil. Add the artichokes, drained, covered and cook for about twenty minutes. At the end, add salt and perfumed with a little minced mint.
Collect everything in the glass of the mixer and blend until you get a firm homogeneous cream. At the end, stuff your Barchette and serve them.
