The dark chocolate custard will be the perfect cream to stuff pastries but also to eat with spoonful!
The custard enriched by the chocolate flavour becomes one of the most delicious filling creams you can imagine! Perfect for filling your creations: it will also be a very quick spoon sweet to prepare, it will be accompanied with some small crispy waffle!
To prepare the Dark Chocolate Custard, first place the egg yolks in a large bowl with the sugar. Whip the egg yolks with the sugar using a whisk, also electric, and keep stirring until you get a frothy and almost white cream.
Then pour the sifted flour and slowly add the milk, continuing to mix.
Transfer the mixture into a pot with a thick bottom. Cook the cream over a low flame, stirring the cream continuously with a wooden spoon. Be careful to mix carefully so that the custard does not stick to the bottom of the pot. When the cream has reached the boil, remove the pot from the heat and add the coarsely chopped dark chocolate (if you do not have chocolate at home, you can also use the bitter cocoa: the result will still be very tasty!).
Then resume stirring the cream using a whisk and continue stirring until the chocolate has completely melted. Pour the cream into a container and cover with film: make sure that the film is in direct contact with the surface of the cream so that it does not create that annoying skin.
Put the cream in the fridge and let it cool before using it for your desserts!
